Let’s be honest, sometime we just don’t have enough time to meal prep elaborate meals for the week. Luckily, you can still prepare for the week ahead with easy, yet delicious meals that make tracking your macros easy. Simple does not mean boring!

Next time you are thinking of ideas for simple meal prepped meals, try these turkey patties with colorful cauliflower rice. This recipe made enough for 4 lunch meals and took me less than 30 minutes!


2 Cece’s Veggie Noodle Co. riced cauliflower packets
1 Jennie-O Extra Lean Ground Turkey packet (16 OZ)
Chopped fresh cilantro
Chopped red and yellow mini bell peppers
Chopped onion
Abodo rub
Pam cooking spray (I like the coconut oil Pam)

Turkey Patties

Sprinkle and mix in some adobo rub on raw ground turkey.
Make four 4-oz patties. Turkey can be a little sticky; try this right after taking it out of the fridge when it’s still cold.
Spray Pam cooking spray on a skillet over medium-high heat and set turkey patties.
Let patties cook for about 5 min and flip.
Make sure patties are cooked all the way through. You can make a small cut in the middle to make sure there is no pink in the center.
Remove from heat and cool.

Colorful Cauliflower Rice

In a bowl, mix riced cauliflower, cilantro (as much as you want! I use a LOT!) about 1 oz chopped onion and 2 oz chopped mini bell peppers.
Spray a large-enough pan to fit both riced cauliflower packets with Pam cooking spray and place over medium heat.
Pour cauliflower mix in pan and cover. Let sit for about 10 min, occasionally stirring it gently. Since I usually heat my meal prepped, I don’t like the cauliflower to get super soft. Think al dente!

Although I do enjoy simple riced cauliflower, its always nice to switch up the flavors and add a little something extra! The onions, cilantro and bell peppers add enough flavor to your meal without adding any sodium or sugar from other sauces or spices.

Separate in to-go containers 150 grs of colorful riced cauliflower and a turkey patty. I added 1 oz of avocado for some fat. Plus, avocado just makes everything so much better don’t you think?!

And there you have it! 4 meals perfect for lunch during your busy week ahead!

I have learned, and continue to learn, that the best way to track and hit your macros is to prepare ahead. This takes the stress away from figuring out what to eat and how to track. Meal prepping does not have to be extremely time consuming or complicated; it can be easy and quick, with food that you still can look forward to eating.
