After some long and stressful days at work last week, I was really looking forward to a margarita and some good Mexican food to celebrate Cinco de Mayo! Even though we don’t really celebrate this holiday in Mexico, here in Texas it’s a big deal. But hey, any excuse to have a good time with friends and enjoy some yummy food is fine by me!

Brandon and I had some friends come over and we made delicious home-made margaritas and cooked some Mexican-inspired macro-friendly recipes. With only a few weeks before our wedding, we all wanted to try to stick to our macros as much as we could.

These healthy turkey nachos were my favorite thing! I can’t wait to make them again. Plus, they are extremely easy and quick to make! A perfect snack for gatherings or movie night.

You could always add a few more toppings or change to beef if you can afford the extra macros. My friend found the original recipe from SkinnyTaste.com and adapted it a bit.

Ingredients:

1 lb extra lean ground turkey
1 minced clove garlic
1/4 chopped onion
1 tbsp chopped cilantro
1 tsp garlic powder
1 tsp cumin powder
1 tsp salt
1/4 cup natural tomato sauce
1/4 cup chicken broth
21 mini rainbow peppers
1 cup 2% low fat shredded cheese
2 tbsp sliced black olives
1 sliced jalapeño
chopped cilantro

*if you are lucky and can afford more macros you might want to try ground beef, sharp cheddar cheese and sour cream.

 

Directions:

Preheat oven to 400 F

Spray a skillet with cooking spray and place over medium heat.

Mix in garlic, cilantro and onion in the skillet. Wait two minutes and mix in turkey, cumin powder, garlic powder and salt. Cook for about 5 minutes.

Add chicken broth and tomato sauce and let simmer for 5 more minutes. Remove from heat and let it cool down while you prepare the mini bell peppers.

Cut mini bell peppers in halves and remove seeds. Place over a baking sheet with foil or parchment paper.

Fill each one with turkey and add cheese and jalapeños.

Place in oven and bake for about 10 minutes. Once cheese is melted, remove from oven and add cilantro and olives.

Ta-da! Now have a sip of your margarita and a bit of this explosion of flavors!
